Our mission is to create beautiful events and serve delicious food while supporting the regional food and farm economy. Using "a day's drive from farm to table" as a distance guide, we source nearly everything we use from smaller, local purveyors, and use organic ingredients whenever possible. It naturally follows that we rely on the seasons to provide us with foods at their very best: berries in the summer, asparagus and ramps in the spring and delicata squash come fall. We serve humanely raised animals and work with a variety of local farms and distributors who are committed to carefully-raised poultry and livestock and small scale wild fisheries.

We serve New York City tap water - one of our finest natural resources - which we purify and carbonate in house. We compost all food scraps to keep food waste out of landfills and get it back into the earth.

We’re incredibly lucky to enjoy the agricultural riches of the Hudson Valley and surrounding areas. It’s our mission to honor and preserve our natural riches for generations to come. Following is a partial list of our farmers and producers. This list changes almost daily! We are also incredibly lucky - and proud - that we now have our own farm in northern Washington County. As of summer/fall 2014, Green Table Farms is in production, raising chickens and turkeys and growing heirloom tomatoes, peppers and lots of winter produce.
